12 Days of Cookies: Lemon Curd Thumbprints

Every year I ask my family if they have any specific requests for this series. And every year my husband asks for a lemon cookie and I roll my eyes and tell him I'll do that for Easter. Lemon just isn't very holiday-ish, you know"
This year he gave me the big puppy dog eyes and said "You've been doing this series for like eight years, right" And NEVER done a lemon cookie for me."
Fine.
I decided to combine the lemon flavor with a holiday classic -- the thumbprint cookie. Most of the time, these cookies are filled with raspberry or chocolate or caramel, but I thought lemon might be a nice twist. I was right!! My hubby loved these so much. I even made an extra batch and didn't fill them so I could stick them in the freezer and bring them out on Christmas Day. Major wife points for me! I used storebought lemon curd to fill these because it's so delicious and easy. I find the lemon curd near the jams and jellies in most grocery stores.
Pucker up, kids! Christmas just got a lemon kick!
