12 Days of Cookies: Mexican Hot Chocolate Sandies

I may have mentioned a time or two that my oldest daughter is a competitive cheerleader. We spend a lot of time traveling around the country so she can compete and do what she loves.
This year she's on a team called Fiesta. (Don't ask how a bunch of little white girls from the suburbs got put on a team called Fiesta; I don't get it either.) BUT we have the best parties because there's always chips, salsa, guac and margaritas for the mamas. This year I'm hosting the holiday party at our house and my wheels were turning on what to make for dessert that fits with our fiesta theme.
These cookies fit the bill and were SUCH a happy surprise. They are fantastic. Mexican hot chocolate always has a pinch of cinnamon added, so that was the inspiration for these. I am not normally a fan of chocolate and cinnamon together, but these cookies do it just right. The addition of brown sugar (for a caramel note), coffee and cayenne pepper take it over the top. I adore these cookies. They are the je ne sais quois, the something different on your cookie platter this year. Mexican hot chocolate sandies" Now that's something to cheer about!
