12 Days of Cookies: Peppermint Sugar Cookies

Every holiday cookie list needs something sweet and simple. You can stuff, roll, shape and cutout fancy cookies all day long but everybody loves a good sugar cookie. And when you lace it with real crushed peppermints and coat it in crunchy sugar" Bam. Elevated.
This is the cookie I would bring to a gathering where I didn't know a soul because I know it would please everyone. This is the cookie I would bring to a new neighbor who just moved in over the holidays if I didn't know their likes/dislikes. This is the cookie I would bring when we go caroling at the nursing home because it's the least likely to cause any, er, digestive issues.
You can't go wrong with this peppermint sugar cookie, kids.

Peppermint Sugar Cookies
The coarse, sparkling sugar on top is what makes these look festive. My favorite is this one from Wilton. Make sure to crush those peppermints very finely -- lots of powder with very small chunks of peppermint otherwise it all sticks to the silpat or parchment.
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature
3/4 cup powdered sugar
1 large egg (the whole egg)
1 additional large egg white
1/2 teaspoon pepper...
