12 Days of Cookies: White Chocolate Brown Sugar Cookies

At first glance, these look like a simple white chocolate cookie. Nothing special. But at first bite" Different story. These cookies are made with brown sugar exclusively (no white) so they are full of caramel-noted goodness. I adore the combination of the brown sugar and the white chocolate; the two of them should be married until the end of time.
If you have a non-chocolate fan in the family, this is the cookie I would make for them. So buttery and caramel-ly and white chocolate-y. You can even sprinkle a little sea salt over the top and make this a gourmet favorite.

This dough needs to be chilled for at least two hours before baking. Don't skip this step or you'll have very flat cookies!
2 cups all-purpose flour
1 teaspoon baking soda
1 and 1/2 teaspoons cornstarch
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup unsalted butter, melted
1 and 1/4 cups packed brown sugar
1 large egg, room temperature
2 teaspoons vanilla extract
1 1/2 cups white chocolate chips
