4 reasons busy moms need an electric pressure cooker

It doesn't matter how much you like cooking, sometimes it just gets old. It's amazing how many excuses I can come up with when I don't want to make dinner and how many places I can come up with to get take-out at a moment's notice. One of the kitchen appliances that helps me maintain sanity is my slow cooker. Unfortunately, a few weeks ago, it met an untimely death when I dropped the crock part and it shattered. Not acceptable.
I ran to the store to grab a new one and my eyes beheld a new, shiny implement called an electric pressure cooker. After a few internet searches and a salesman's promise that I could return it if I wasn't completely satisfied, I brought home the Power Pressure Cooker XL. I am not exaggerating when I say that it has changed my life. This looks and is much less scary than the pressure cooker of yore.
The only memory I have of a pressure cooker is the one my mom used to seal canning jars -- a rattly, scary, super-heated pan with a lid sealed tightly in place. These are very different from the sleek little number I brought home, which I found to be immediately intuitive to use. I knew nothing about pressure cooking when I got it and I have make over a dozen delicious meals in the three weeks I have had it.
