An easy make-ahead breakfast for busy mornings
by Laura Falin posted in Life & Home
Our mornings can be crazy. All four of the kids are in school of some sort (middle...elementary...pre...), and on some days I have four separate drop-offs. We look like a bus depot, with scheduled arrivals and departures and people loading and unloading backpacks and lunches and instruments and science fair projects.
So while we always have breakfast, some days it's a hectic kind of breakfast that involves eating but also hair brushing and last-minute studying and me yelling at people to hurry up. I try not to make most days like that but, you know, that's life sometimes.
These overnight oats are a lifesaver on days like that. Make them up in about five minutes the night before, pull them out of the fridge and eat them the next morning. You don't even have to dish them up. And because they have a lid, you can grab 'em on your way out the door to work or wherever you're going and eat them there, too.
Oats, plain Greek yogurt, milk, a little honey and jam to sweeten, and berries -- all such good things to start the day. I'm not going to pretend I eat well all day long, but if I start out strong at breakfast, I'm more likely to behave. And there's plenty of protein and stuff to stick to everyone's ribs so they won't be hungry again in an hour. This should last the kids until their next snack or lunch.
Ingredients:
1/4 c plain Greek yogurt
1/4 c milk
1/4 c oats
1/4 c frozen or fresh berries
1/2 Tb honey
1 Tb raspberry or strawberry jam
