Back-to-school breakfast sundaes
by Lindsay Weiss posted in Life
We are headed back to school this week and man, is it a hard pill to swallow for my kiddos. We have had an amazing summer of sleeping late, swimming, and exploring -- so much so that this is the first time I've ever been sad to see school start.
I came up with these breakfast "sundaes" to surprise them with on Wednesday morning before they head out. They're super easy, relatively healthy (the "ice cream" is vanilla Greek yogurt), and the whipped cream and sprinkles will make them smile. Also, you can throw these together while you're half-asleep too -- because god knows I haven't seen 6:30 a.m. in months!! If back-to-school is in your future, these little sundaes will send them off with a smile.

Back-to-School Breakfast Sundaes
Be sure to make these right before serving because the waffle bowls are not super strong and will soak up the yogurt fairly quickly (about 10 min.) and cave in.
Waffle cone cups (I used Keebler Waffle Bowls)
Vanilla yogurt
Assorted berries
Whipped cream and sprinkles
Scoop yogurt into cups and assemble sundaes as desired.
