Breakfast at home or on the go: Coffee cake muffins

Muffins are the breakfast of champions in my house. As we eek our way toward the end of the school year, our breakfasts become more and more rushed. I used to get up 20 minutes before the kids to have lunches packed and have a balanced breakfast ready. Now, we all hit snooze one too many times and rely on someone to panic and wake everybody up. Then the kids frantically try to find clean clothes while I throw the quickest thing I can find on a plate and slosh some milk in a cup to drink. They inhale this while I'm simultaneously brushing their hair and filling their water bottles. No time for a packed lunch and the kids use those portable wisp toothbrushes to brush their teeth in the car.
We are seriously not morning people. Especially at the end of the school year. So muffins are my go-to at least two days per week. I can make them on Sundays and they are huge time-savers during the week. I don't always post my recipes here, but these were particularly good and the 12 muffins didn't last past Monday evening. They were breakfast for everyone, snack for the kids and dessert for Jeff and I. I really wish I had doubled this one and frozen some!
