Celebrate Easter with bunny ear cupcakes

Surprise! Easter is early this year. We'll barely be putting our shamrocks aside when it's already time to get out the baskets and start hiding some eggs (a quick tip for an egg hunt if you have lots of different ages -- color code your eggs. We have the younger kids find large plastic eggs that are one color...and the older kids find tiny chocolate eggs of a different color. It saves a lot of tears from frustrated little ones who move slower).
These bunny cupcakes are a fun way to celebrate as well.
They're really only one extra step after making normal cupcakes. The ears are super-simple, and you can enlist kids to help make them. They come from one regular sized marshmallow -- I made a quick little video to show you how:
If your kids aren't old enough to handle kitchen scissors yet, they can still help with the sprinkles and with putting the ears on the cupcakes. Supplies:
cupcakes (any flavor), cooled
white frosting
regular marshmallows
sprinkles, poured into a shallow bowl
kitchen scissors
Instructions:
Frost your cupcakes. Take one large marshmallow and cut it diagonally across with the kitchen scissors.
Dip the inside of each side (the sticky part) in your dish of sprinkles.
Tuck one end into your frosting and position it so it looks like a bunny ear. Repeat with the other marshmallow half.
