I have never posted this because it's really not even a recipe. But I make it almost weekly (it's one of the kids' favorites) so I figured it might come in handy in your rotation too.
I should point out that there are plenty of NON-CHEATING recipes for cashew chicken, where you actually make the delicious sauce yourself, but when time is short and you don't want fast food, this is our go-to.
There are two secrets to this "recipe":
1. Get your chicken breasts at the meat counter and have the butcher chop them into bite-sized pieces for you. It saves so much time and gross-ness.
2. Buy a bottled sauce that's good. We love PF Chang's Teriyaki sauce which is sold in the regular grocery store.
Cheater's Cashew Chicken
3-4 chicken breasts, chopped into bite size pieces

1 bottle teriyaki sauce

1 cup cashew pieces

Rice, broccoli, or whatever you want on the side
Drizzle a large saute pan with olive oil and cook chicken pieces over medium heat until cooked through, about 6-8 minutes. Drizzle with sauce and cashews and stir to combine.
I usually blanch the broccoli while the chicken is cooking. Add broccoli to boiling water for 3-5 min. Drain and rinse with cold water. Stir with a little butter and salt.
