Copycat Mother's iced oatmeal cookies: A throwback to childhood

These are a throwback to my childhood lunchbox. My dad always packed these iced oatmeal cookies from the grocery store and they were soft, lightly spiced and coated with a powdered sugar icing. I adored them (and still do!)
I've never tried to make them before, but I've seen a couple of copycat recipes on Pinterest and decided to try one. It didn't work out right away -- they were much crunchier than I remembered -- but I figured it out and came up with a great copycat. This one will go in our regular rotation, for sure. We ADORED them.
You can make the dough ahead of time and freeze it, too. I do that all the time, and then bake fresh cookies whenever the need calls for it! (Make sure you thaw the dough first.)

Copycat Iced Oatmeal Cookies
It is a little bit of a pain to use a blender/food processor to grind the oatmeal first, but it's pretty important for the texture of the cookie.
1 cup old-fashioned rolled oats
1 cup + 2 tbsp. all purpose flour
1 tsp. cornstarch
1 1/2 teaspoons baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 1/4 tsp. cinnamon
1/4 tsp. ground nutmeg
8 tbsp. (1 stick) unsalted butter, softened
1/2 c. brown sugar, packed
1/4 c. granulated sugar
1 egg
1 tsp. vanilla extract
For the glaze:
1 1/2 cups powdered sugar
1/3 tsp. vanilla extract
2 1/4 tbsp. milk
