Creamy, dreamy, no-bake lemon mousse parfaits for Easter

If you're online browsing around for what to make for Easter this weekend, stop here. These are so good. I actually made them this morning and had to skip breakfast and lunch because I could not stop sticking my spoon in the stupid bowl. Creamy, dreamy is the perfect description -- these are a lemon-y cheesecake mousse with a delicious graham crust. Light and fluffy...tart and sweet...smooth and silky...I can't think of a better way to end a spring meal.
Beware, these are a little messy to make. I had like three different bowls going at once, so enlist the hubs to do your dishes. But the bonus is you can make them ahead and they don't require any actual baking. Just store them in the fridge and take 'em out when you're ready!

Creamy Dreamy Lemon Mousse Parfaits
Crust
3/4 cup graham cracker crumbs (6 full sheets)
2 Tbsp granulated sugar
3 Tbsp butter, melted
Filling
2 1/2 Tbsp fresh-squeezed lemon juice
1 1/2 Tbsp water
1 1/2 tsp unflavored gelatin powder
1 1/2 cups heavy whipping cream
1 cup confectioners sugar, divided
Yellow food coloring (optional)
12 oz cream cheese, softened
1 (10 oz) jar lemon curd
