Detox with this Southwest salad and cilantro-lime vinagrette

Can you see me" I'm clawing my way through the sugar, gluten and fat consumed over the past two weeks. I'm coming up for air, but it's slow going folks. It's like driving a tank through the soupiest fog ever, and barely barely seeing a light at the end of the road.
This salad is the light.
(That sounds like something from Deepak Chopra. Scratch that.)
We made a HUGE batch of this salad on New Year's Day and kept the dressing on the side. The intent was to have enough to eat all week long, and it has served us well so far. If you're like us, just having the healthy option ready and available is 99% of the battle. Having this in the fridge makes it easy to...well, find the light (heh heh).
We cut out meat for this week, so used lots of black beans for the protein. If you're eating meat, this is excellent with grilled chicken, pork or steak.

Southwest Detox Salad with Cilantro Lime Vinaigrette
We don't love a ton of dressing on our salad. If you do, you may want to 1 1/2x this one.
For Salad:
2 heads romaine lettuce, washed and chopped
1 can black beans, rinsed and drained
3 ears corn, grilled
1 large red pepper, chopped
1/2 cup shredded Monterey jack cheese
2 tablespoons chopped cilantro
For Dressing:
1 cup packed cilantro
1/2 cup extra-virgin olive oil
1/4 cup lime juice
1/4 cup orange juice
1/2 teaspoon salt...
