Easy and delicious: One-pot beef stroganoff pasta

All the work for this takes place in one pot (or large saute pan with high sides). That's right, only one dish to do and a complete, hearty meal ready in about 20 minutes. It's all the goodness of your grandma's beef stroganoff without all the work. (I think my granny starts her beef stroganoff the night before we're eating it!)
Most beef stroganoff recipes call for mushrooms of some sort, but my kids will not come near a 'shroom, so this one is fungus-free. You could certainly saute them with the onion if your family digs them.
Other than that, this one is easy-peasy!

One-Pot Beef Stroganoff Pasta
This keeps in the fridge for a few days and makes a great lunch!
1 tablespoon extra-virgin olive oil, divided
1/2 cup diced onion
2 cloves garlic, minced
1 lb ground beef
2 teaspoons paprika
4 cups low sodium beef broth
8 oz dry pasta (penne, rotini, whatever you have)
1/2 cup sour cream
salt and pepper
fresh parsley, for serving
Heat the olive oil over medium heat in a stock pot or large saute pan with high sides. Add the onion, season with salt and pepper, and cook until translucent, 4-5 minutes. Stir in the garlic and cook until fragrant, 30-60 seconds. Add the ground beef and continue to cook, breaking up the beef with a spoon as it...
