Easy glazed cinnamon oatmeal bread (no mixer required!)
by Lindsay Weiss posted in Life & Home
This bread made a dreaded Monday morning so happy for all of us. I made the house smell amazing with it on Sunday afternoon and then wrapped it up tight and wouldn't let anyone touch it until breakfast on Monday. SURPRISE! Everybody got up on time. Everybody got dressed in less than five minutes. Everybody had their school bags packed and ready to go so they could sit down and eat this for breakfast. That, my friends, is Monday Morning WINNING.
I thought this was a nice change from banana or pumpkin bread, which we have around here a lot. It is an incredibly moist bread with a big, thick crumb thanks to the oatmeal. It bakes up into a bakery-worthy loaf and has a perfect balance of apples (from the applesauce) and cinnamon. And the glaze is pretty genius, just a combo of applesauce and powdered sugar. Make your Monday more tolerable...bake this up this weekend!
