Fall fabulous: Snickerdoodle apple cobbler

I love a good cobbler, but this one takes it to a new level subbing in homemade snickerdoodles for the shortcake-like topping. Think warm, syrupy apples smothered in cinnamon sugar cookie and dripping with vanilla bean ice cream. There is no better fall dessert, especially right out of the oven.
I made this at 8pm one night, thinking I'd let it cool, refrigerate and take a picture the next day before serving to my family. (HA! That's funny, Lindsay.) Because at 8am the next morning all that was left was one tiny spoonful and I HAD TO MAKE IT AGAIN to take a picture.
Grrrr.

Snickerdoodle Apple Cobbler
When I made this the second time, I did it in a smaller pan (7x10 oval) and did a deeper dish version. I liked it even better!
1 cup salted butter, softened and divided
6 Granny Smith apples, peeled and sliced thin (about 14 slices per apple)
1/2 cup brown sugar, packed
3 teaspoons cinnamon, divided
3/4 cup + 1/3 cup granulated sugar, divided
1 egg
1 tablespoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
2 cups flour
Preheat oven to 350°F. Grease a 9x13 baking dish.
Place 1/4 cup butter in a large skillet over medium heat. Melt completely and add sliced apples, brown sugar and 1 teaspoon cinnamon. Stir to combine. Cook for about five minutes, stirring frequently, until apples have softened. (They will continue t...
