I don't know what it is about late summer but anyone with a garden is BEGGING people to take zucchini. I've got zucchini coming at me from all directions in my neighborhood and, while I love a good zucchini bread as much as the next gal, I was looking for a quicker, easier way to use up all this green stuff.
If you can slice a zucchini and sprinkle a few things on top, this recipe is for you. It's perfect with whatever meat you're grilling and uses up a lot of zucchini quickly. If you're in the zucchini-is-bland camp, give this one a try -- the garlic, balsamic and Italian seasoning really give it good flavor.

Easy Grilled Zucchini Make sure to brush the balsamic on at the end of the grilling, otherwise it can burn.
2 medium zucchinis, sliced in 1/4" slices
1 tablespoon olive oil
2 teaspoons garlic
1 teaspoon Italian seasoning
1 pinch salt
2 tablespoons balsamic vinegar
Preheat grill for medium-low heat and lightly oil the grate.
Brush zucchini with olive oil. Sprinkle garlic, Italian seasoning, and salt over zucchini.
Cook on preheated grill until grill marks appear, 3-4 minutes per side. Brush balsamic vinegar over the zucchini and continue cooking 1 minute more. Serve immediately.
