Greek mahi mahi - make it for dinner

Do you cook fish often for your family" We tend to eat a lot of chicken in our house, mostly because my husband is not a fan of seafood. This year I want to break out of my usual line-up, and this recipe for greek mahi-mahi is just the ticket.
The thing that's great about fish is how it cooks up so fast. Plus it's light and easy to digest. Do your kids like to eat fish" The only way to know is to cook it...and cook it often. With this delicious sauce over the mahi-mahi, they will all love it.
Here's the recipe:
Greek Mahi Mahi
Ingredients:
3 tomatoes, chopped (preferably garden fresh if in season)
2 tablespoons -plus 2 tablespoons extra-virgin olive oil, divided
1 tablespoon red wine vinegar
4 pieces (6 oz. each) mahi mahi fillets (can substitute with tilapia)
½ cup mayonnaise
¼ cup crumbled feta cheese
2 tablespoon chopped dill or 1 ½ tablespoon dried dill
1 ½ tsp. fresh lemon juice
8 very thin slices of lemon
Preparation:
Preheat your broiler.
Toss the tomatoes with the oil, vinegar and ½ tsp. salt
Line a boiler pan or small 4-sided sheet pan with foil or parchment paper and lightly oil foil. Put fish, skin sides down, on a pan and season with ¼ tsp of each of salt and pepper. Whisk together mayonnaise, feta, herbs and lemon juice and spread over the top of the fish. Put 2 lemon slices (slightly overlapping) on center of each fillet. Drizzle lemon slices with remaining 2 tsp. oil.
