Insta Pot awesome: Coconut chicken and rice

Did you get an Insta Pot for Christmas" Apparently, we are one of the 48,987,384 families that did.
I was skeptical of this kitchen appliance du jour because I hate extra "stuff" in my kitchen. I'm not at gadget girl AT ALL. I especially dislike things that take up a lot of space in my kitchen and get limited use. I did not ask for an Insta Pot but my hubby was super pumped about it because it's supposed to be such a time saver.
It's actually pretty cool. We're talking a whole meal in less than 20 minutes. Now you do have to do a little prep first, because the Insta Pot requires you to be READY with everything. It goes fast. I almost choked when one recipe cooked 3 lbs worth of chicken, plus sides, in 15 minutes. And not all rubbery or gross either. We're talking moist chicken. Crazy!
Anyway, this was one of the first recipes we tried and it was really good. The yellow color comes from the turmeric, which adds a delicious Indian flair to the dish. I actually liked it even better for lunch the next day when the flavors had really married. We adapted the recipe a bit when we made it a second time, and I thought it was worth sharing.
