Instant Pot garlic parmesan chicken and potatoes

I won't bore you with my Instant Pot love again, but for a girl who hates extra kitchen gadgets and appliances, this one is golden. I love that you can saute and pressure cook using the same pot, so you're not dirty-ing up a bunch of stuff.
This was definitely our favorite Instant Pot meal to date. It's an old slow cooker recipe I converted because you had to brown the chicken in a pan first. I hate when slow cooker recipes do that; if I wanted to brown the chicken first I would just do the whole thing in THAT pan and not dirty up my slow cooker. But in the Instant Pot you can do it all, and only clean one thing at the end. Perfection.
This recipe was neutral enough that all my kids ate it. I had to leave the parmesan and parsley off for the younger two, so to them this was just a tender, flavorful chicken and potato dish. But when you douse it in parmesan" Sooooooooo good. You can do this one with chicken thighs too. The cook time was about the same. The chicken literally falls apart in this recipe. SO GOOD.

Before serving you want to LIBERALLY sprinkle the parmesan over everything. Don't be afraid, it's what makes the dish. There will be liquid left over in the bottom; we spooned a little over our food because it's so tasty.
