Kid-tested and approved: Asian meatballs and rice
by Lindsay Weiss posted in Life
On the rare occasion I make a dinner that EVERYONE likes, I know I have my post for the week. It doesn't happen often, and I did not expect it to happen with this one. Why" Because these are turkey meatballs and they're packed with quinoa. (Insert hysterical laughter at my boys eating quinoa. It just doesn't happen.)
The quinoa acts like breadcrumbs in this recipe; you don't taste or feel it -- it simply binds the meatball together, so it's pretty invisible. And the ground turkey is tough to discern too because it's coated in a delicious Asian sauce, so you can't really tell if the meat is a tiny bit lighter than beef.
A friend of mine told me about this recipe and said her kids loved it too. She was so excited to give it to me, she hand-wrote it on the back of my temporary driver's license paper! I'm not sure where she got it, so if you know the original source let me know and I'll give proper credit. This is equally as good heated up for lunch leftovers the next day. Definitely going in the regular rotation...
