Kid-tested: M&M protein bites
by Lindsay Weiss posted in Life
I don't know what it is about school, but my kids are STARVING the minute they get in my car at 3:30. Like I-haven't-eaten-in-two-years starving and can't possibly go to (insert activity/practice here) without a major snack. I'd been keeping my car stocked with granola bars and bananas but sometimes, especially when they're headed to a sports practice, those just aren't enough.
The key to filling my kids up is protein, but they are not fans. Nobody wants turkey, chicken, hummus, or beans at 3:30 p.m. They want a candy bar, some juice, and a few gummy bears for "dessert." They don't like the protein bars that you buy at the store because they taste gross.
These little energy bites have been life-saving in terms of after school snacks on-the-go. They are sweet enough that the kids like them, thanks to peanut butter, chocolate, and honey. But they contain enough protein (thanks to the peanut butter and protein powder) and fiber (from the oatmeal) to really be filling. I make a double batch of these every single week and they don't make it until Friday. They're singlehandedly the best snack I've made in a long time. Also, if your kids are old enough to pull up a chair and stir, they can make these themselves! (Mine use plastic gloves to roll them into balls.)
1 1/2 cups oatmeal (I use old-fashioned)
1/2 cup peanut butter
2 tablespoons vanilla protein powder
1/3 cup honey
1/4 cup mini M&Ms
1/4 cup mini chocolate chips
Dump all...
