Kid-tested: Teriyaki rice 'n meatball bowls
by Lindsay Weiss posted in Life & Home
You know that happy dance when you find a meal that everyone will eat" I did that yesterday! It is so incredibly rare for me to find something that pleases everyone, especially my youngest two. But this simple meatballs 'n rice dish fit the bill and it's actually pretty healthy too.
The teriyaki glaze is what makes this dish. It's nice and thick and there's plenty of it, so it can soak into the rice and flavor the whole thing. The dish comes together fairly quickly once you get the meatballs in the oven. You can get the rice going and stir up the glaze and it will all be ready at the same time.
This one is definitely becoming a regular in our rotation. I hope it does in yours too!
