Kids in the kitchen: Easy monster eyeballs for Halloween

My kids had no school on Friday, so we needed a project. These little Halloween cookies seemed like the perfect thing and we only needed a few ingredients to make them happen. My 4-year-old could do this project from start to finish, but my older kids loved it too. I just spread out a big plastic tablecloth on our kitchen table and let them have at it. I also melted the candy wafers for them (because their attention span for the microwave is questionable).
I mistakenly took the long route and baked mini cookies from some sugar cookie dough for the kids to use. But after I did that, I realized mini vanilla wafers would have been ready-made and much easier! We actually included these in our "Boo" baskets we gave to friends. It was a super cute homemade addition that the kids felt really proud of.
Easy Monster Eyeballs
Mini vanilla wafers (Or mini sugar cookies)
Green candy melts (I found Wilton melts at Walmart)
Eyeball candies (Also from Wilton)
Melt candy according to package directions. Stir in canola oil to thin if necessary. Dip cookies entirely in melted candy and shake off excess. Top each with eyeball candy. Let set for 20 min or so to harden.
