Make this pumpkin mug cake in 5 minutes!

If you do nothing else this week, carve out five minutes and make this for yourself. Not for your kids or your spouse (though that's a lovely thought too), make it for YOU. I did this today while my older two were at school and my preschooler was napping. I felt like I was cheating on motherhood or something, but man did I enjoy every moist, tender and pumpkin-y bite.
(Also, you have to SLATHER this in whipped cream because...well, pumpkin.)
Some mug cakes are sort of gummy, but this one really had the perfect cake-y texture. If you have a big oversized mug, you can really double this recipe. (I did!)
Easy Pumpkin Mug Cake
I love freshly whipped cream, but let's face it -- this is a five-minute dessert. Turns out the "Extra Creamy" Cool-Whip is darn good too!
4 tbsp all purpose flour
1/4 tsp baking powder
2 tbsp granulated white sugar
2 tbsp milk
1/2 tbsp vegetable oil
2 tbsp pumpkin puree
1/3 teaspoon pumpkin spice
Whipped Cream
Combine all ingredients in a microwave-safe mug and stir until batter is smooth. Cook in microwave for approximately 1 minute and 15 seconds. Let cool a few minutes and top with whipped cream.
