No-bake red, white & blue icebox cake

Wanna have your cake without turning on the oven" Yassssssssss! Graham crackers turn into the PERFECT cake when left to soak in a delicious cheesecake mixture.
Everybody loves a little patriotic cake over the Fourth of July holiday, but nobody wants to turn on the oven in 95-degree heat. This graham cracker cake is just the ticket for all my cake-lovers.
Start by mixing up pudding mix, cream cheese, and milk, then folding in some whipped cream. Simply layer that with some graham crackers and berries and let it sit in the fridge and do all the work! Take it out a few hours later and the crackers have absorbed some of the cheesecake mixture and are cake-like tender. When you're ready to serve and you've got a delicious (and pretty) themed holiday cake! My kids actually helped assemble this one; it's pretty hard to mess up!
Red, White & Blue Icebox Cake
If you can't find vanilla graham crackers, regular are fine. And same with the pudding -- if you can't find cheesecake-flavored then vanilla or lemon is fine!
1 package (15 oz) vanilla graham crackers
8 oz reduced fat (Neufchatel) cream cheese, softened
2 (3.4 oz) packages cheesecake-flavored instant pudding
2-1/4 cups cold milk
12 oz Cool Whip (or homemade whipped cream)
3 cups fresh strawberries, sliced
1-1/2 cups fresh blueberries
