One-pot wonder: Cilantro lime chicken and rice

This is a perfect weeknight meal: packed with flavor and only dirties up one pot! This homemade version of a Chipotle classic is also kid-friendly.
I save time (and grossness) by having my butcher chop the chicken breast for me. When I'm making the meal, all I have to do is dump the chicken straight in the pan. After that, it's literally as simple as dumping and stirring everything in. A quick boil of the minute rice in broth makes the whole dish come together in minutes.
Sprinkle with some cilantro and green onions and voila! An entire meal -- starch and protein -- in one pan!
One-Pot Cilantro Lime Chicken and Rice
1 Tbsp olive oil
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
Salt and pepper
2 cloves garlic, minced
1 1/2 cups low-sodium chicken broth
1 (4 oz) can chopped green chilies
2 tsp lime zest
3 Tbsp lime juice
1 (14.5 oz) can black beans, rinsed and well drained
2 cups minute white rice (don't use regular rice!)
1/3 cup chopped cilantro
4 green onions, chopped
Heat oil in a large skillet or pot over medium-high heat. Add chicken, sprinkle with salt and pepper, and saute until cooked through, about 5-6 minutes, adding in garlic at last 1 minute of cooking. Stir in broth, green chilies, lime zest, lime juice, black beans and season with salt and pepper to taste. Bring mixture to a boil, add rice, fully immerse rice in broth, and allow to boil 20 seconds, then remove from heat and immediately cover...
