Perfect for showers and for Easter: Luscious lemon butter crinkles

These are my new favorite lemon cookies IN THE WORLD. They are bakery-worthy. Beautiful to look at and so light and tender -- they're like little lemon clouds dusted in powdered sugar.
What these are not is crunchy. In fact, they're sort of a riff on gooey butter cake which is, of course, tender and fluffy. So if you're looking for a lemon cookie that has some heft and crunch, these are not your jam. But if you're looking for soft and tender, light and lemony, these are your new best friend. They are perfect for baby showers, bridal showers and EASTER, EASTER, EASTER!

You are going to think you are adding way too much lemon while making this recipe -- lemon zest, lemon juice, lemon extract -- but don't skimp! Cream cheese is a notorious foil to all things lemon and you are using a WHOLE BLOCK OF CREAM CHEESE in this recipe so you gotta be generous with the lemon. I actually think you could add even more than I call for here if you really like to pucker, but I went for just a lovely scent of lemon and my kids said it was perfect. You need to make this dough ahead of time because it has to chill for at least two hours. I usually do it overnight. Then you roll them into balls, coat in powdered sugar, and DO NOT FLATTEN THEM. This keeps them nice and puffy.
