Popsicles for breakfast" YES, YOU CAN!

This is my oldest "sneaking" one of the popsicles I made yesterday. It was only 9 a.m.; I was about to reprimand her, but stopped myself because these popsicles are definitely healthier than the Cap'n Crunch she'd normally request. Greek yogurt, honey, and strawberries" I can definitely do that for breakfast, so I snapped a pic, smiled and walked away. WINNING!
Since both of my older kids eat a rushed breakfast and head out the door to swim team every morning, these popsicles have ended up being the perfect breakfast food. They can eat it while they walk to the pool AND it's got protein and fruit. Why didn't I think of this sooner"
Breakfast Popsicles
You could swap out the fruit for whatever berries you have on hand. I froze these in layers, which takes a few more minutes and looks prettier, but my kids love them when I just mix it all together too. Your call! 2 cups strawberries
4 tablespoons honey, divided
3/4 teaspoon lemon juice
1 cup Greek yogurt
1/2 teaspoon vanilla extract
Instructions
Place the strawberries, 3 tablespoons honey, and lemon juice in a Vitamix blender or regular food processor and process until you get a smooth puree.
In a bowl, whisk together Greek yogurt with 1 tablespoon honey and vanilla extract.
Fill each popsicle mold with a tablespoon of the strawberry puree. Freeze for 15 min.
Then place 1-2 tablespoons of the greek yogurt mixture on top. Freeze again. Finally, fill with the strawberry...
