Rainbow Jell-O jigglers

With St. Patrick's Day coming up, I'm so excited to share this simple and fun rainbow Jell-O jigglers recipe with you. It's so easy to make and your kids are going to be over the rainbow when they see how just three colors of Jell-O can make a full rainbow of colors.
These cute "jigglers" are perfect for a spring fling or maybe even a little Irish leprechaun-y spirit around St. Paddy's Day. To be honest, they are too easy and cute to wait for a special holiday or get-together. You should bring some of that sunshine and rainbow action to the kitchen today!
These are so easy. Here's what you'll need:
1 - 6 oz. box of red Jell-O
1 - 6 oz. box of yellow Jell-O
1 - 6 oz. box of blue Jell-O
1 - box of Knox Gelatin (use one envelope per color)
6 cups water
1 1/2 cups ice
9 x 13 inch pan
Step 1: Mix the box of blue Jell-O with one envelope of Knox Gelatin.
Step 2: Pour 2 cups of boiling water into the blue gelatin powder mixture.
Step 3: Add 1/2 cup ice. Stir until it thickens. Remove any remaining ice cubes along with any bubbles that may have formed (tap the bowl lightly -- this will help remove bubbles).
Step 4: Pour blue gelatin mixture into a 9 x 13 inch pan. Let it set in the refrigerator.
Step 5: Repeat steps 1-4 with the box of yellow Jell-O.
Step 6: Repeat steps 1-4 with the box of red Jell-O.
Step 7: Cut into cubes (I like them about 1 inch by 1 inch but you can do whatever size you'd like)
Step 8: Voila! Enjoy those ...
