Ridiculously easy lemon-filled angel food cake (5 ingredients!)
by Lindsay Weiss posted in Life
This dessert gives me great glee because it's so simple, but looks so fancy. Is it homemade" No. Does it look homemade" Yes. It's so pretty.
If you can whip some cream and buy a few things from the store you can make this pretty cake in just a few minutes. Then bring it out for dessert and watch the accolades roll in. You could also cheat and use Cool-Whip which would make this ridiculously easy. (Actually, my kids prefer Cool-Whip but I felt I had to do something for this dessert.)
If you've never purchased lemon curd from the store, it's often located with the jellies and jams.
Happy NOT baking!

Easy Lemon-Filled Angel Food Cake 1 store-bought angel food cake
1 jar (10 oz.) lemon curd
1 1/2 cup heavy whipping cream
1/4 cup confectioners sugar
1 teaspoon vanilla extract
Use a long, serrated knife to cut the top off of the cake about 1/3rd of the way down. Remove top, and set aside.
Use a sharp knife to cut a 1-inch panel in the center of the bottom half. Gently hollow out the center of cake going about a 1/3rd of the way to the bottom. Leave at least 1 inch of cake around edges and bottom. Set aside.
Fill the hollowed-out cake with lemon curd.
Replace top on cake and cover. Before serving beat together heavy whipping cream, powdered sugar, and vanilla extract, until stiff peaks form. Cover angel food cake in whipped cream and serve.
