Shortcut summer dessert: Grilled pound cake with strawberry sauce
by Lindsay Weiss posted in Life
If you need to throw together a summer "WOW!" dessert quickly, I'm your girl. Here's what you need to do:
1. Buy a loaf of pound cake from the store.
2. Slice and throw it on the grill for 1-2 minutes.
3. Slice some strawberries and throw them in a pot with some sugar and vanilla.
4. Pile it all together
How's that for EASY" It's also great with ice cream or whipped cream too. Grilling the poundcake offsets the sweetness and gives it more of a toasted texture and flavor. I absolutely love it.
The only thing to be careful of is not leaving the poundcake on the grill too long. It dries out and burns quickly, so just 1-2 minutes or until grill marks appear and the edges a browned.

Grilled Pound Cake with Homemade Strawberry Sauce
1 loaf poundcake
1 pint fresh strawberries, washed and sliced
1/3 cup white sugar
1 teaspoon vanilla
Combine strawberries, sugar, and vanilla in a saucepan. Cook over medium heat, stirring occasionally. The mixture might be dry at first, but then juice will begin to form. Continue stirring; mash a few strawberries with a wooden spoon or heat-proof spatula to help produce the syrup. Cook until sauce thickens, about 15 minutes.
If desired, you can puree all or part of the sauce to make it smoother/more liquid. We usually don't bother!
