Simple perfection: Oatmeal chocolate chip cookies

In my seven years of blogging, I can't find a single oatmeal chocolate chip cookie post. I think I have a subconscious aversion to oatmeal cookies because they are so often associated with raisins and I greatly dislike oatmeal raisin cookies. (Don't get me started on that -- what a waste of a cookie! Where's the chocolate") But a friend brought me some oatmeal chocolate chip cookies recently and it was like a revelation! So good! Oatmeal chocolate chip cookies, where have you been all my life"
Once we polished off all my friend's cookies, I made another batch and it wasn't very good. Oatmeal cookies are particularly finicky when it comes to the right ratio of wet to dry ingredients and I did not get it right the first time. But I did the second time and they were life-changing. Crunchy and crackly on the outside, soft and tender on the inside -- full of texture and smooth, melty chocolate. Swoon. If there ever was a cookie you do NOT want to overbake, oatmeal cookies are it. Overbaking with all that oatmeal turns them into hockey pucks, so watch closely and remove them from the oven when the centers are slightly underbaked. Think of this as The Golden Rule of Oatmeal Cookies.
