Simple summer sweets: Grilled peaches with honey
by Lindsay Weiss posted in Life
I had a 12-pack of peaches last week and found myself with four super-ripe ready-to-eat peaches left over. We were already grilling some chicken and sweet potatoes, so we threw the peaches on too and scrambled for something to "top" them with. We had used honey on the sweet potatoes, and thought it might be perfect on the peaches too.
We were so right. These qualified as dessert (even for the kids!) and were essentially summertime on a plate. Just watch them carefully -- they only need a few minutes. I really hate mushy peaches, so I just want the grill marks and a little tenderness. Drizzle the honey at the end so the peaches don't burn on the grill.
