The holy grail of cookies: Caramel-stuffed snickerdoodles

My kids start back to school this week (yes, THIS WEEK) and nobody is all that fired up about it. We decided to "invent" a cookie that would cheer us up, or at least be something to look forward to after surviving the first day of school.
These cookies so far surpassed my expectations it's not even funny. They are THE BOMB. They're my most favorite snickeredoodle recipe of all time -- mostly because of the browned butter (for flavor) and pudding mix (for light, puffy texture). Then I wrapped the perfect dough around a little Milky Way bite-sized candy and baked it up. The result was gobsmackingly delicious.
We die for these cookies when they're warm because the chocolate and caramel are soft and gooey. But if these live to see a second day in your house, they're just as stupendous at room temp. These will cure your back-to-school blues lickety-split.

Chocolate Caramel-Stuffed Snickerdoodles
You have to make these cookies fairly large to cover the Milky Way completely. Once you taste them, you won't mind eating the whole thing one bit!
2 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1/2 teaspoon ground cinnamon
