The salad that goes with everything...

A few months ago my friend Erica mentioned that one of her favorite foods is (wait for it)...
Kale salad.
Favorite foods. What on earth" Who chooses kale over chocolate cake" Spaghetti and meatballs" Homemade cinnamon rolls"
I had to try this kale salad. It turns out it's a pretty basic recipe, the jist of which was published in the New York Times a few years ago. Simple ingredients. Simple dressing. Bathed in breadcrumbs for a little texture. And laced with shaved parmesan for flavor.
You know what" This stuff is good. Really, really good. I will probably make it once a week because Jeff and I loved it so much, and our oldest kiddo Kate even liked it. The kale takes a back seat to the garlic (in the dressing), parmesan, and breadcrumbs. Is it my favorite food" No. Is it my favorite salad" Right now, YES!

Kale Salad with Parmesan and Breadcrumbs (The Salad That Goes With Everything)
1 lb bag Kale
5 oz shaved parmesan
3 tbsp seasoned breadcrumbs (I use Italian style)
Dressing
1 cup olive oil
1/2 cup lemon juice
6 teaspoons minced garlic
2 teaspoons salt
Pinch red pepper flakes
Combine kale, parm and breadcrumbs in a large salad bowl. In a separate bowl, whisk dressing ingredients together. Pour dressing over kale and let sit for 30 minutes, tossing a few times. Serve immediately.
