Your weekday breakfast solution: Make-ahead parfaits

Three weeks ago, I started making these parfaits en masse on Sunday evenings. It was my last-ditch attempt at making before-school breakfasts healthier but fast. I will never be the mom that gets up and makes a full breakfast in the morning because none of us are morning people. We despise mornings. We might actually be nocturnal and just trying to conform to societal standards because every single one of us is a busy body at night, and a zombie in the morning.
Sooooo...once I accepted that I would never be the mom that cooks eggs and french toast in the morning, it was all about how I could avoid cereal and instant oatmeal every single day and get some thing healthier in their bodies.
Making these parfaits in bulk is the biggest breakfast win in my thirteen years of parenting. It's not even complicated -- there's no recipe, per se -- but it just requires fifteen minutes on a Sunday evening (which, in turn, saves you at least fifteen minutes every single morning for the week). I make sixteen of these on Sunday nights. They are always gone by Thursday or Friday. I typically make two different varieties -- a berry version and a peach/mango version. This satisfies the palates of my whole family, but you could change it up based on your tastes.
