Moms need breakfast too! Try this easy avocado toast

Twice in the past few weeks, I've looked up and it's 11 a.m. and I'm about to pass out. I must have low blood sugar and that combined with a large cup of coffee can sometimes give me a racing heart and a cold, clammy about-to-pass-out feeling. What it's really telling me is that I've got to be better about eating a good breakfast...before 11 a.m.
I've found if I eat something with a good ratio of carbs/fat/protein, I'm good until mid-afternoon. If I eat a piece of toast or a bagel, then I'm hungry again in like ten minutes. So I'm really trying to take a second and make myself something each morning.
This avocado toast (usually with an egg on top) is my absolute favorite. I made up the recipe after eating it at my local First Watch brunch spot. It's a super easy combo of avocado, cilantro, lime, and salt/pepper. I know avocado toast is all the rage right now, but this version is special with the cilantro and lime. It's my absolute favorite version, especially with a runny egg on top! If you're like me and struggle to nourish yourself each morning, try ONE DAY of this. I think it's all you'll need!
Easy Avocado Toast
You can mix this up the night before and cover it tightly. The lime juice does a pretty good job of helping the avocado stay green, though it may not be perfect. For me, it's worth it to have it already prepared.
2 ripe avocados
1 teaspoon chopped fresh cilantro
Squeeze of fresh lime juice
Salt and pepper
