My husband told me his brother was coming for dinner 58 minutes before he arrived. (Who was counting") His brother is from New York, so it's a big deal to see him and I was elated but like WHAT DO WE SERVE"
I had already been planning fajitas, so just made them a little nicer and fancier than normal (i.e., no skimping on the guacamole, fresh salsa etc.) But I had nothing in the dessert department and that's kinda my thing.
I totally raided my pantry and figured I could doctor up a mix pretty quickly. When I realized I had a brownie mix AND cookie dough, this idea came together. The combo of brownies and cookies (brookies) combined with peanut butter chips is bakery-worthy. Truly. These don't look or taste like they came from a mix, so no guilty feelings. This one will stay in my regular rotation. I love to bake, but am not afraid of taking some help from the store when a busy life gets in the way. Try this one!

Peanut Butter Brookies
I like these best slightly underbaked, cooled for 10 minutes, then thrown in the freezer for 20 minutes. The freezing helps them set when underbaked and makes cutting them much prettier.
1 LARGE roll (30 oz) refrigerated chocolate chip cookies
1 cup peanut butter chips
1 box brownie mix
